Coconut water is rising in popularity as a sports drink, so the obvious thing to do is use it as a mixer!

8 - 12 oz. coconut water
1 oz. dark rum
lime juice to taste

Pour coconut water into a big glass half full of ice. Add rum, stir. Add lime juice to taste.

We used Bacardi Dark for the first try, so monsteralice dubbed it a "Fly by Night". I'm sure that it has many many other names, but most recipes seem to call for white or golden rum, so I think we can stick with that name...

You can get coconut water in a lot of stores these days- both in the Latino foods section and in the "healthy stuff" section. Unless, of course, you are fortunate enough to be able to get fresh green coconuts (and have a power drill handy...).

It seems like more experimentation may be in order- adding pineapple juice may be a good thing. We'll see...

I love the idea of your Fly-by-Night! Trader Joe's also sells chocolate-flavored coconut water. I have one in my fridge right now - waiting for me to get home tonight. I have not yet tried it, so I don't know how well it would mix with anything.
